Position Summary
The Meat Plant Technician will assist the Meat Plant Manager with meat plant operations, specifically as a teaching and enterprise facility. The position will evaluate and select cuts of meat for processing. HACCP Certification is required. As with all positions at CWC, this position will adhere to professional standards and ethics.
Examples of Duties
Essential Duties and Responsibilities
- Assist with livestock procurement, slaughter, fabrication, and processing of meat animal products (evening and weekend work may be required and in coordination with the Meat Science Instructor).
- Practice the Food Safety Program including HACCP, GMP’s, SSOP’s, and SOP’s.
- Assist with developing and maintaining livestock slaughter and meat fabrication procedures based on USDA/State of Wyoming requirements.
- Assist in the execution of daily production including plant cleanliness and sanitation, equipment operations including maintenance/repair, and meat plant maintenance and repair.
- Help train CWC students.
- Evening and weekend work may be required.
- Assist with the teaching of laboratory courses in slaughter, fabrication, slaughter, and meat evaluation in coordination with the Meat Science Instructor and Meat Plant Manager.
- Assist with the formulation and production of all CWC branded meat products, administer product sales and disbursement in coordination with the Meat Science Instructor.
- Attends department and division meetings.
- Performs other reasonable or related duties as directed.

Education
- High School graduation preferred
- One to three years working in the meat processing discipline is preferred.
- Driver’s license; CDL preferred.
- Equivalent combinations of education and experience from which comparable knowledge and abilities can be acquired may be considered on a case-by-case basis.
- Large animal agriculture experience including cattle, sheep, goats, and hogs.
- Two years’ experience in meat processing including slaughter and fabrication.
- Ability to quickly identify issues and constructively work to develop effective solutions.
- Knowledge of CWC policies, procedures and practices.
- Excellent knowledge and demonstrable ability to use personal computer software, preferably Microsoft, Google and meat production software applications.
- Possess good oral and written communication skills.
- Ability to relate to a broad range of students.
- Ability to promote a positive atmosphere of teamwork and cooperation both with the college and the community.
- Ability to maintain professional relationships with students, colleagues and supervisors.
- Ability to relate with a diverse population in a professional, helpful manner and be a team player.
- Ability to perform administrative/clerical duties such as: technical telephone usage, copying documents, learning new software programs.
- Ability to apply communications skills
- Ability to apply basic manual/maintenance skills such as assembling/disassembling, following safety procedures and rules, lifting heavy equipment, loading and unloading, maintaining equipment, monitoring operations, cutting, operating equipment, working outdoors or indoors.
- Meet meat processing demands in coordination with the Meat Plant Manager; work is subject to general supervision and review. Follows general instructions and directions and makes recommendations for your own work and department area. Has some freedom of choice in approach to problems, methods of operations and the setting of goals and objectives.

- Various meat processing equipment used for large animal slaughter to fabrication. A variety of hand tools including but not limited to knives and saws will be used. Large trucks pulling large trailers will be required. This setup will require a CDL to drive.
- Work conditions range from sedentary work to very heavy work. Exerting ten pounds of force to in excess of 1000 pounds (with proper equipment) will occur as needed. Pulling, lifting, grasping, kneeling and standing particularly for sustained periods of time. o Keyboarding and computer work; walking or moving about to accomplish tasks; talking including expressing or exchanging ideas; and hearing includes the ability to receive detailed information through oral communication and seeing, the ability to perceive the nature of objects by the eye.
- Indoor spaces at approximately 50 degrees Fahrenheit; large animal facilities, walking or moving about to accomplish tasks; talking including expressing or exchanging ideas; and hearing includes the ability to receive detailed information through oral communication.
